Blondie cupcakes with raspberry topping + Giveaway v sodelovanju s Trgovino Popolna Dekoracija (for Slovenia only)


I created these beautiful cupcakes when I was in the biggest hurry. It’s always like this. When it is the most inconvenient for something like this to happen, it happens! I admit it, I swear when this happens. Not a lot, but I just must a little.

It bothers me, when I can’t passionately devote to photography and disconnect from everything. It seems to me, that when my conditions aren’t perfect, the end result is not good. Because everything goes wrong. Everything was nice the topping got ruined. So I had to improvise and change the plan. In the end, everything looked nice, but still, I was mad =).

Another thing that went wrong was that I wasn’t alone. I feel more comfortable when I’m alone. So I can focus. So nothing throws me off and I can really be Me. Gasper was home and thank God that he understands my unusual requests: ''Pretend that there’s an invisible wall between us and I’m not taking pics of these cupcakes in front of your nose, just do your own thing and the most important thing – DON’T LOOK AT ME, DON’T YOU DARE look at me!''. Almost all of what is written in the last sentence is true. But….it is true that I wasn’t it so strict and scary . But yeah, I did said he shouldn’t stare at what I’m doing and he of course violated this rule, because he always has to broke my rules at least once. But I did manage to focus on photographing, so the invisible wall works!

Te lepe mini tortice sem ustvarila, ko se mi je najbolj mudilo. Vedno je tako. Ko je najmanj potrebno, se vse podre in priznam, takrat preklinjam. Ne preveč ampak malo pa moram.

Moti me, kadar se ne morem strastno posvetiti fotografiranju in odklopiti vse, ker se mi zdi, da je takrat rezultat slabši. Namenoma mi vsaka stvar nagaja. Vse je bilo lepo, dokler se ni krema za vrh tortic sfižila. Zato sem morala improvizirati in spremeniti plan. Na koncu je kar lepo izpadlo ampak vseeno sem bila jezna=).

Druga stvar, ki je šla narobe je bila ta, da nisem bila sama. Najbolj mi paše, če sem pri vsem kar počnem v zvezi s tem blogom, sama. Da se lahko fokusiram. Da me nič ne zmoti in sem lahko res jaz. Gašper je bil doma in hvalabogu, da razume moje nenavadne prošnje: ''Pretvarjaj se, da je tukaj nevidni zid, da ne fotografiram cupcakes pred tvojim nosom, ukvarjaj se s tistim karkoli delaš in najbolj pomembna stvar-NE GLEJ ME, NE DRZNI SI ME POGLEDATI!''. Skoraj vse kar je zapisano v zadnjem stavku je resnica. Res pa je,da nisem bila tako stroga in strašna. Samo ja, res me ni smel pogledati, kar je seveda prekršil. Vedno mora vsaj enkrat prekršiti kar ga prosim =). Sem se pa lažje osredotočila na fotografiranje, torej nevidni zid deluje!

Danes sem vesela, ker prvič  sama organiziram giveaway, ki je omejen samo na Slovenijo, torej boste imeli več možnosti, da zmagate. Trgovina Popolna dekoracija je pripravila Papirčke za mafine in okraske Pink 'n' Mix in to kar 3x! Zdelo se mi je, da bo najboljše, če uporabim aplikacijo Rafflecopter za žrebanje. Recipe adapted from: Call me cupcake

The Recipe

Ingredients
Blondie cupcakes
300g flour
1 ½ tsp baking powder
pinch of salt
125g butter
150g sugar
3 large eggs
1 tsp vanilla extract
75ml milk
100g white chocolate chips

Raspberry Topping
4 large egg whites
175g sugar
raspberry aroma+extra pink food coloring

The process
Blondie cupcakes
Heat oven to 350 F. Line one standard cupcake pan with paper liners. Into a medium bowl, sift together flour, baking powder, and salt. Set aside.

Beat butter and suger until light and fluffy. Add eggs, one at a time, beating well after each addition. Add the vanilla extract. Add  the dry ingredients alternating with the milk.

Add the chocolate chips and beat until combined.

Divide the batter evenly between the rpepared liners and bake for about 18-21 minutes.

Transfer pans to a wire rack to cool for 5-10 minutes then remove cupcakes from pan and let cool completely.

Raspberry Topping
Pour egg whites and sugar in a clean and heat proof bowl. Put the bowl in a double boiler, the water underneath should be simmering. Whisk the sugar and eggs with a whisk to prevent them from curdling. The mixture should be about 65 degrees celsius, about 140-150 degrees F. If you don't have a thermometer, just rub some mixture between your fingers. If the sugar has melted, is done.

Remove from heat, whip until white, fluffy and cool. This step can take up to 10 minutes. Add raspberry aroma, food coloring, whip some more.

Sestavine
Bele mini tortice
300g moke
1 ½ žličke pecilnega praška
ščepec soli
125 g masla
150g sladkorja
3 velika jajca
1 čajna žlička vanilijevega ekstrakta
75ml mleka
100 g bele čokolade/ belih čokoladnih solzic

Malinov Toping
beljaki 4 jajc
175g sladkorja
aroma maline + ekstra roza jedilno barvilo

Postopek
Bele mini tortice
Segrejte pečico na 180°C. V pekač za peko mafinov položite papirčke za mafine. V srednje veliki posodi zmešajte skupaj moko, pecilni prašek in sol.

Z električnim mešalnikom stepite maslo in sladkor. Dodajte jajca, enega po enega. Dodajte ekstrakt vanilije. Dodajte suhe sestavine, izmenično z mlekom.

Dodajte čokoladne solzice in jih dobro vmešajte.

Enakomerno porazdelite maso v papirčke in pecite približno 18-21 minut.

Po peki jih 5-10 minut pustite, da se ohladijo.

Malinov toping
Jajčne beljake in sladkor zmešajte in prelijte v odporno posodo ter jo postavite nad ali v posodo, v kateri vre voda, mešajte z metlico. Temperatura naj ne preseže 65 stopinj Celzija. če nimate termometra, uporabite svoje prste, če je sladkor stopljen, je postopek končan.

Z električnim mešalnikom stepite beljake, da dobite belo, svetlečo kremo. Ta korak lahko traja do 10 minut. Dodajte malinovo aromo, lahko tudi ekstra roza jedilno barvo, stepajte, dokler se barva ne razporedi enakomerno.

Scones with raisins / Pogačice z rozinami

The recipe for scones with raisins is the last one I used in the context of my Tea Party. It feels like it happened a couple of months ago. My thoughts are with other recipes, other plans ... In the meantime, Gasper returned from Costa Rica, he went there because of kitesurfing (he doesn’t allow me anymore to publicly call him Truffle – well, okay, it’s not that serious, he said it once that it’s not cool so I said to myself 'Meh, let him be, Turffle no more'). He will maybe even write a guest post about his Costa Rica trip. When he finds some time. People, even I barely see him :P.

In the meantime (well, yesterday) my birthday happened (God, why am I so old ?). And yees, I reached 1000 followers on my Facebook page and 3000 on Pinterest. Well, it is something, not nothing =).Promoting a blog is sometimes a pain in the ass. Because it takes a lot of time. I just want to create, cook, bake, photograph, post and discuss it with readers, read the feedback, other people's opinion about the things I'm doing. Those other promotional things are sometimes really unnecessary.

I blab and blab and write nothing about these scones! I liked them, honestly. They are very popular in England, America, Australia. Easy to bake, you can eat them for breakfast, at a picnic, with tea, on a trip to nature. You can mix almost anything in the dough. I plan on making those chocolate chip scones (which I see constantly on Pinterest). It seems to me that the classical way of eating them is with jam and whipped cream on top and of course a cup of tea. At least, Nikita ate them this way in one episode (Boy, that was more than 10 years ago and I never even liked Nikita, almost never watched it- action themes are not for me, I say this type of movies/TV shows are made for guys .. but once I DID watch it, I remembered this thing and of course, something that is food related but had absolutely nothing to do with the series =) ).

Recept za pogačice z rozinami je še zadnji, ki sem ga uporabila v okviru Čajanke. Zdi se mi, kot da je minilo že par mesecev od tega. Moje misli so pri drugih receptih, drugih načrtih… Vmes se je Gašper vrnil iz Kostarike, kjer je kajtal (ne dovoli mi, da bi ga še naprej  javno klicala Tartufi-no v resnici ni tako resno, enkrat  samkrat je nekaj pojamral pa sem si rekla 'Meh, naj mu bo, Turffle no more'). Morda bo celo napisal en guest post o temu kako je bilo. Če bo našel kaj časa. Ljudje, še jaz ga komaj kaj vidim :P.

Vmes (včeraj) se je zgodil moj rojstni dan (Bog, zakaj sem tako stara?). In jaaaa, tisočko sem dosegla na Facebooku pa tri tisočko na Pinterestu. Nekaj je =). Saj včasih mi gre promoviranje Bloga prav na živce. Ker vzame veliko časa. Želim si samo ustvarjati, kuhati, peči, fotografirati, objaviti post in debatirati z bralci, prebrati feedback, mnenje drugih ljudi o temu, kar počnem. Tiste ostale promocijske stvari so včasih res odveč.

Blebetam in blebetam, o pogačicah (angl. scones) pa nič ne povem! Ja, meni so bile všeč, iskreno. Zelo so  popularne v Angliji, Ameriki, Avstraliji. Hitro se jih pripravi, poje za zajtrk, na pikniku, ob čaju, na potepu. V testo se lahko vmeša praktično vse. V planu imam tudi take s čokoladnimi solzicami (kar naprej jih gledam na Pinterestu). Se mi pa zdi, da se klasično jedo ob čaju, z marmelado in stepeno sladko smetano. Vsaj tako jih je Nikita jedla v eni epizodi (madona, to je bilo že več kot 10 let nazaj, pa sploh nisem marala Nikite, skoraj nikoli je nisem gledala-akcijske tematike niso zame, temu jaz rečem film/nadaljevanke za tipe.. AMPAK takrat, ko pa sem gledala, sem si pa tole zapomnila, seveda, nekaj kar je bilo s hrano povezano ni pa imelo absolutno nobene zveze z nadaljevanko =) ).

Papirnate vrečke iz Trgovine Popolna dekoracija so mi tukaj res prišle prav. In veste kaj, zdi se mi nekaj najlepšega, če sam nekaj spečeš, zapakiraš v tako luštno vrečko in komu podariš. Kar tako, za Dobro jutro =).

Recipe from: Recipe 4 living

The Recipe

Ingredients

3 cups all-purpose flour
1/2 cup white sugar
5 teaspoons baking powder
1/2 teaspoon salt
1/4 cup butter
1 egg, beaten
1 cup milk
80g raisins

The process

Preheat the oven to 400 degrees and grease a medium sized cookie sheet.

In a bowl, mix the dry ingredients. Add the softened butter and whisk the wet and dry until moist. Add raisins.

Once the dough comes together, knead quickly. Roll into a 3/4 inch round and cut into 6-8 pieces. Place onto the greased sheet and bake for 15 minutes or until golden brown.
Sestavine

385g večnamenske moke
65g belega sladkorja
5 čajnih žličk pecilnega praška
1/2 žličke soli
32g masla
1 jajce
130g mleka
80g rozin

Postopek

Pečico segrejte na 200°C in namažite pekač z maslom ali položite peki papir na pekač.

V skledi zmešajte suhe sestavine. Dodajte zmehčano maslo in zmešajte skupaj mokre in suhe sestavine.

Testi pregnetite, zvaljajte do debeline 2cm. Uporabite kozarec ali modelček za krog in izrežite kroge, porabite celotno testo. Postavite kroge na pekač in pecite 15min.

Downton Abbey Cucumber sandwiches / Kumarični sendviči

Cucumber sandwiches couldn’t be left out of my Tea party!! After all, it is necessary to bite into something salty and to have a savory break between cupcakes and scones with raisins.

I like cucumber sandwiches, because they are something special, different and light. It seems to me that every so often we come across some cucumber canapé at a wedding party or some different kind of party. We hardly notice them, but at the same time we are positively surprised. I remember years ago, when I was doing my practice in the Pediatric Clinic and they just held a party or a meeting.. . a more sociable type of thing for the employees .. ugh I don’t know what it was. And when my mentor came back, she brought me a few cucumber canapés. Hell, they were good enough if I still remember them! =) .. and that kind mentor at the same time.

Na Čajanki absolutno niso smeli manjkati kumarični sendviči!! Navsezadnje je treba ugrizniti v nekaj slanega in imeti slano pavzo med mini torticami in pogačicami z rozinami.

Kumarični sendviči so mi všeč, ker so nekaj posebnega, drugačnega, lahkega. Zdi se mi, da vsake toliko časa naletimo na kakšen kumarični kanapé  na poroki ali zabavi drugačne sorte. Tako, čisto mimogrede. Komaj jih opazimo, a hkrati nas pozitivno presenetijo. Spomnim se, ko sem leta nazaj opravljala prakso v Pediatrični kliniki in je ravno takrat potekalo neko srečanje..ali sestanek bolj družabne vrste za zaposlene..ah saj ne vem kaj je bilo. In ko se je moja mentorica vrnila, mi je prinesla par kumaričnih kanapejev. Hudiča, bili so dovolj dobri, da se jih še danes spomnim! =) ..ter prijazne mentorice hkrati.

Recipe adapted from: Kitchen joy

The recipe

Ingredients

8 ounces cream cheese, softened
1 large cucumber, peeled, seeded, and finely diced
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon pepper
1 tablespoon fresh dill, chopped
sliced white sandwich bread, about 16 slices
sprigs of dill for garnish

The process

In a medium bowl, mix together cream cheese, garlic powder, salt, pepper, chopped dill, and diced cucumber. Spread on 8 slices of sandwich bread. Top with sprigs of dill, then close sandwiches with remaining bread slices. Cut crusts from bread, forming square sandwiches. Cut each sandwich into quarters on the diagonal, creating 4 triangle mini-sandwiches each.
Sestavine

225g kremni sir (Philadelphia)
1 velika kumara, olupljena, odstranjena semena in fino sesekljana
1/4 žličke česna v prahu
1/4 žličke soli
1/4 žličke popra
1 žlica svežega ali sušenega kopra, nasekljanega
rezine belega toasta, približno 16 rezin
vejice kopra za okras

Postopek

V srednje veliki skledi zmešajte kremni sir, česen v prahu, sol, poper, sesekljan koper in sesekljano kumaro. Namažite dobljen namaz na rezine toasta, dodajte na vrh svež koper, dodajte drugo rezino toasta na vrh. Odrežite skorjo toasta in razrežite po diagonali, da dobite trikotnike (in še po drugi diagonali, če želite dobiti 4 manjše trikotnike).

Hi-hat Cupcakes / Mini tortice Hi-hat

I needed something heartfelt for my Tea party. Something you can eat without cutlery, looks nice, it's easy to make, warms my heart and in some way reminds me of my childhood. These Hi-hat cupcakes remind me of some Slovenian dessert I ate as a child ( I can’t find an English expression). I remember that we often bought it in a local grocery store-before it was demolished and replaced by some other brand. When I was in the center of Kranj, I always ordered this dessert in a pastry shop.

I found the perfect recipe. This recipe is useful for three desserts: for muffins (just out of curiosity I baked out of the box cupcakes a few weeks ago and the difference between these muffins and the other ones is so very obvious. Those were dry, these are luscious, moist, rich), cupcakes or for that dessert I can’t find an expression for.

Za Čajanko sem potrebovala nekaj prisrčnega. Nekaj, kar se je z roko, lepo zgleda, je preprosto, pogreje pri srcu in me na nek način spomni na otroštvo. Te mini tortice me spominjajo na indijančke-nekaj, kar sem najraje jedla kot otrok. Spomnim se, da smo jih velikokrat kupili v takratni lokalni trgovini Živila-preden so jo porušili in postavili Mercator. Kadar sem bila v centru Kranja, sem v slaščičarni vedno naročila indijančka.

Našla sem idealen recept. Ta recept je trojno uporaben: za mafine (zadnjič sem za hec spekla mini tortice iz škatle in razlika med to maso in tisto iz škatle je tako zelo očitna. Tista iz škatle suha, ta sočna, bogata), mini tortice ali indijančke (samo za podlago potem poiščite kaj drugega).

Papirčki in okraski iz Popolne dekoracije so tako pasali zraven, da se sploh nisem preveč naprezala z aranžiranjem pogrinjka.

The Recipe

Ingredients

For the Batter
3 ounces unsweetened chocolate, chopped
1 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup (1 stick) unsalted butter, softened
1 1/4 cups sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup sour cream

For the Chocolate Coating
2 cups chopped (about 12 ounces) semisweet chocolate
3 tablespoons canola or vegetable oil

For the Frosting
1 3/4 cups sugar
3 large egg whites
1/4 teaspoon cream of tartar
1 teaspoon vanilla extract

The process

Step 1
Preheat oven to 350 degrees with rack in center. Prepare the batter: Place chocolate in a medium heatproof bowl, and set it over a medium saucepan of barely simmering water; stir chocolate until melted and smooth. Remove bowl from heat, and set aside to cool slightly.

Step 2
Meanwhile, whisk together flour, baking powder, baking soda, and salt in a medium bowl; set aside.

Step 3
In the bowl of an electric mixer fitted with the paddle attachment, cream butter and sugar on medium speed, scraping sides of bowl as needed, until light and fluffy. On low speed, mix in melted chocolate. Increase speed to medium, and add eggs, one at a time, mixing well after each addition. Add vanilla, and beat until mixture is creamy and color has lightened slightly, about 1 minute. Mix in sour cream. On low speed, add half of reserved flour mixture, beating until just incorporated. Mix in 1/2 cup water. Add remaining flour mixture, and mix until just incorporated.

Step 4
Line a cupcake pan with paper liners. Fill each liner with enough batter to come 1/8 inch from top, about 1/3 cup. Bake, rotating pans halfway through, until tops are firm and a cake tester inserted in the center comes out clean, about 20 minutes. Transfer cupcakes to a wire rack to cool in pan for 10 minutes.

Step 5
Use a small knife to loosen any tops stuck to the pan. Carefully invert cupcakes onto the wire rack. Turn cupcakes right side up, and let cool completely.

Step 6
Prepare the frosting: In a large heatproof bowl, combine sugar, 1/4 cup water, egg whites, and cream of tartar. Using a handheld electric mixer, beat on high speed until foamy, about 1 minute. Set bowl over a pan of barely simmering water. Beat on high speed until frosting forms stiff peaks, about 12 minutes; frosting should register 160 degrees on a candy thermometer. Remove from heat; stir in vanilla extracts, and beat for 2 minutes more until frosting thickens.

Step 7
Transfer frosting to a large pastry bag fitted with a 1/2-inch plain pastry tip. Leaving a 1/8-inch border on each cupcake, pipe a spiral of frosting into a 2-inch-high cone shape, using about 1/2 cup of frosting per cupcake. Transfer cupcakes to a baking sheet, and refrigerate while preparing the chocolate coating.

Step 8
Prepare the chocolate coating: Combine chocolate and oil in a medium heat-proof bowl set over a medium saucepan of barely simmering water; stir until melted and smooth. Transfer to a small bowl, and let cool about 15 minutes.

Step 9
Holding each cupcake by its bottom, dip cupcake in the chocolate to coat frosting, allowing excess to drip off. Transfer to a baking sheet fitted with a wire rack. Spoon more coating around edge of cupcake and any exposed frosting; none of the frosting should show. Let cupcakes stand at room temperature 15 minutes.

Step 10
Carefully remove paper liners from cupcakes, and discard. Place cupcakes on a serving platter, and refrigerate for 30 minutes to let coating set. Cover, and refrigerate for 2 hours more. Serve cold. Cupcakes can be refrigerated for up to 3 days.

Sestavine

MAFINI
85g nesladkane čokolade, sesekljane
130g bele moke
1/2 žličke pecilnega praška
1/2 žličke sode bikarbone
1/4 žličke soli
65g nesoljenega masla, zmehčanega
160g sladkorja
2 jajci
1 žlička ekstrakta vanilije
65g kisle smetane

ČOKOLADNA GLAZURA
340g čokolade, sesekljane
3 žlice olja

TOPING
230g sladkorja
beljaki 3 jajc
1/4 žličke vinskega kamna
1 žlička ekstrakta vanilije

Postopek

KORAK 1
Pečico segrejte na 180°C. Pripravimo maso: čokolado stopimo v posodi, ki jo položimo nad ali v drugo posodo z vrelo vodo. Odstranite in pustimo, da se čokolada nekoliko ohladi.

KORAK 2
Medtem v drugi posodi zmešamo skupaj moko, pecilni prašek, sodo bikarbono in sol.

KORAK 3
V skledi z električnim mešalnikom zmešamo maslo in sladkor, toliko, da postane puhasto. Nastavite na nizko hitrost in dodajte stopljeno čokolado. Povečajte na srednjo hitrost in dodajte  jajca, enega po enega, dobro premešajte. Dodajte ekstrakt vanilije in mešajte, dokler mešanica ne postane kremasta, približno 1 minuto. Dodajte kislo smetano. Na nizki hitrosti, dodajte polovico mešanice z moko, nato vmešajte 65ml vode, dodajte ostalo polovico prejšnje mešanice z moko in mešajte, dokler ni masa kremasta.

KORAK 4
V pekač za mafine vstavite papirčke. Napolnite do 2/3 z maso. Pecite 20min pri 180°C. Po peki jih pustite vsaj 10min, da se ohladijo.

KORAK 5
Obrnite jih na glavo, da se ohladijo še spodaj.

KORAK 6
Pripravite toping: Na res nizkem ognju združite v posodi sladkor, beljake in 30ml vode. Stalno mešajte, toliko, da se sladkor stopi. Prelijte v posodo z mikserjem, dodajte ekstrakt vanilije in stepajte, dokler ne nastane kompaktna krema, približno 12min.

KORAK 7
S plastično vrečko nabrizgamo kremo na ohlajene mafine. Prestavite jih v hladilnik.

KORAK 8
Pripravite čokoladni preliv: Združite čokolado in olje v posodo in jo takoj kot prej, stopite nad vrelo vodo. Dobro premešajte, prelijte v majhno posodo, primerno za pomakanje mini tortic vanjo. Počakajte približno 15min, da se čokolada ohladi.

KORAK 9
Potopite mini tortice v čokolado, tako da prekrijete celoten toping, da se nič belega ne vidi, na robovih si lahko pomagate s žličko. Držite toliko časa dvignjene, da odkaplja odvečna čokolada, obrnite in postavite na krožnik, pekač…

KORAK 10
Postavite jih v hladilnik za 2 uri. V hladilniku jih lahko hranite do 3 dni. Postrezite jih hladne.

Tea Party / Čajanka + Trgovina Popolna dekoracija

Lately I’m obsessed with England. Not because of attractions such as Big Ben, the London Eye, Piccadilly Circus, River Thames, Trafalgar Square, Buckingham Palace, Covent Garden, Madame Tussauds, ... and certainly not because of Harry Potter =). What attracts me is the countryside, typical English Tea Parties, English gardens that are hidden behind stone walls and melancholic, gray beaches.

Ever since I started re-watching a BBC’s TV show that my family and I watched when I was little, You Rang, M'Lord? (I’m currently watching Season 3), these cute tea parties started to occupy my mind full time. Hardly an episode goes by without tea, mini cucumber sandwiches and cherry cake baked by Mrs Lipton. I usually want to quickly realize my wishes, so I decided that I will have a Tea party!

I will post all the recipes this week!
Zadnje čase me navdušuje Anglija. Ne zaradi znamenitosti, kot so Big Ben, London Eye, Piccadilly Circus, reka Temza, Trafalgar Square, Buckinghamska palača, Covent garden, muzej voščenih lutk,… in še manj zaradi Harry Potterja =). Tisto, kar me privlači, je podeželje, tipične angleške čajanke, angleški vrtovi, ki so skriti za obzidji ter melanholične, sive plaže.

Odkar sem začela obujati spomine na BBC-jevo nadaljevanko You Rang, M'Lord? (trenutno sem pri 3. Sezoni) so me čajanke še toliko bolj začele matrati. Skoraj ne mine epizoda brez čaja, kumaričnih mini sendvičev in češnjevega kolača gospe Lipton. Ponavadi si želje rada hitro uresničim, zato sem se odločila, da bom imela Čajanko!

TRGOVINA POPOLNA DEKORACIJA

Hkrati je bila to idealna priložnost za predstavitev mojih sponzorjev - Trgovina Popolna Dekoracija. Lepo je videti, da je takih trgovin tudi v Sloveniji vedno več.

Odločila sem se, da bom recepte objavila posebej, tekom tega tedna, saj bi bila drugače objava čisto predolga =).

Walnut salad / Orehova solata + GIVEAWAY

I just returned from running and I must admit that I am really happy that I’m slowly getting back in shape. The last time I ran was in Fall and in between I was almost totally inactive in terms of exercise. Spring is like a start of something new and it makes me even more motivated.

At the same time, I decided that I will start to eat more clean, to become more aware of the food I put in my body. I started to eat a lot of salads but not just plain salads. I like salads that contain a lot of ingredients and make me feel full, because honestly, chewing just plain old lettuce can become boring.

This salad is perhaps more Fall-ish. I love it because it has so much going, a lot of different flavors are blended and I don’t feel hungry after I finish it.

Ravno sem se vrnila s teka in moram priznati, da sem prav vesela, da se počasi spravljam nazaj v formo. Nazadnje sem tekla jeseni in vmes sem bila praktično totalno neaktivna, kar se tiče telovadbe. Pomlad je kot nekakšen začetek nečesa in zaradi tega sem še toliko bolj motivirana.

Hkrati sem se odločila, da prečistim način prehranjevanja in bolj pazim na to, kaj dam vase. Začela sem jesti ogromno solat ampak to ne takih, praznih. Všeč so mi solate, ki vsebujejo veliko sestavin in me nasitijo, ker iskreno, žvečenje zelene solate lahko postane dolgočasno.

Tale solata je morda bolj jesenska. Jaz jo obožujem, ker se toliko dogaja v njej, veliko različnih okusov se meša in da mi tisto sitost, ki jo potrebujem.

Recipe adapted from: Pinch of yum

The recipe

Ingredients
For the salad
1 cup pomegranate seeds
2 cups chopped mixed lettuce
¼ cup toasted walnuts
¼ cup feta cheese

For the dressing
½ cup minced onion or shallot
2 tablespoons olive oil
2 tablespoons water
2 tablespoons honey
½ tablespoon apple cider vinegar
½ teaspoon salt
1 squeeze lemon or orange juice

The process
1.Prep the salad ingredients (chop, rinse, toast, etc).
2.Mince the shallot or onion and saute in ½ tablespoons olive oil to reduce the bite. When soft and fragrant, remove from heat and transfer to a food processor. (If you want a stronger flavor for your dressing, skip the sauteing altogether. The shallot in particular works well for this.)
3.Pulse the onions or shallot with the remaining olive oil, water, honey, apple cider vinegar, salt, and orange juice until smooth and creamy. Taste and adjust. Add additional olive oil or water to keep the mixture moving through the food processor.
4.Toss the salad ingredients together with the dressing just before serving.
Sestavine
Za solato
1 skodelica semen granatnega jabolka
2 skodelice sesekljane mešane solate
¼ skodelice popečenih orehov
¼ skodelice feta sir

Za preliv
½ skodelice sesekljane čebule ali šalotke
2 žlici oljčnega olja
2 žlici vode
2 žlici medu
½ žlica jabolčni kis
½ žličke soli
Sok limone ali pomaranče

Postopek
1. Pripravite sestavine za solato( sesekljajte, izpirajte, popražite, itd ) .
2. Zmeljite šalotko ali čebulo in prepražite na ½ žlici olivnega olja.
3. Nato odstranite z ognja in čebulo prenesite v multipraktik in zmeljite s preostalim olivnim oljem, vodo, medom, jabolčnim kisom, soljo, in pomarančnim/limoninim sokom, dokler ni masa gladka in kremasta. Po okusu prilagodite in dodajte več olivnega olje ali vode, če je to potrebno
4. Tik pred serviranjem združite vse sestavine in jih prelijte s prelivom.
